What you’ll need:
1 tsp. ground cumin
½ tsp. ground coriander
½ tsp. smoked paprika
6 tbsp. extra-virgin olive oil
2 lb. small green and yellow summer squash
1 pt. grape tomatoes
12 oz. broccoli florets
8 oz. cremini or button mushrooms
1 lime

Caprese Salad Kabobs

What you’ll need:
24 grape tomatoes
12 cherry-sized fresh mozzarella balls
24 fresh basil leaves
2 tbsp. olive oil
2 tsp. balsamic vinegar

Parisian Potato Salad 

What you’ll need:
3 lb. Yukon gold potatoes
¾ cup. Greek yogurt
3 tbsp. extra virgin olive oil
2 tbsp. grainy mustard
4 stalks celery
1.2 cup cornichon pickles
½ small red onion
¼ cup parsley

What you’ll need:
3 lb. all-purpose potatoes
½ cup mayonnaise
½ cup milk
2 tbsp. distilled white vinegar
1 tsp. sugar
2 large stalks celery

Strawberry Salsa

What you’ll need:
1 pint fresh strawberries
4 plum tomatoes
1 small red onion
1-2 medium jalapenos
2 tbsp. lime juice
1 tbsp olive oil
2 garlic cloves

2 cups sour cream

8 oz. fat-free cream cheese
½ cup fat-free sour cream
½ cup taco sauce
1 tsp. ground cumin
1 can refried beans
1 cup shredded lettuce

What you’ll need:
1 cup fresh strawberries
1 3 oz pack red jello
1-pint heavy whipping cream
2 tbsps sugar
1/2 tsp vanilla extract
1 pt blueberries

7–1/2 mason jars
